16 ozs baby lima beans cooked
16 ozs fresh or frozen corn kernels
16 ozs thin green beans blanched
2 roma tomatoes diced
1 red bell pepper diced
2 green onion thinly sliced
1/2 red onion sliced in strips
DRESSING:
1/4 cup extra virgin olive oil
1/4 cup cider vinegar
1 teaspoon Dijon mustard
1 clove garlic minced
pinch sugar
salt & freshly ground pepper to taste
3 tbsps fresh cilantro finely chopped
Combine all vegetables in a large bowl.
Whisk all dressing ingredients except cilantro together. Pour over the veggies, add the cilantro and mix to combine.
